I love the summer time; hosting BBQs, heading out to the beach, attending weddings, and time outside with Thor (my puppy)! It also means that I need to buckle down to be able to meet my goals. Since my goals are aimed for “life” and not simply short-term, I realized I need to completely change my mindset. For this to happen, I started searching for recipes that could be altered to fit my lifestyle changes. I stumbled on an Angel Hair Primavera dish with delicious vegetables and a viable option of adding shrimp or grilled chicken. After enjoying the delicious Angel Hair Primavera dish, I thought about my goals. I used to believe that if I didn’t eat according to my goals every day, it would completely derail me. This way of thinking actually derailed me more often. So, to hold myself more accountable for my actions I began using this mantra: “Will this help me reach my goals, or will it set me back farther than I already am?” Sounds simple, right? It’s an easy question, and it’s a yes or no answer (usually); if it doesn’t help you, than why are you going to let it keep you from your goal?

I started telling more people about my goals, and what lifestyle changes I wanted for myself in the foreseeable future. I signed up for two sets of guaranteed races for 2018: one is the NYC Marathon & the other is NYC Half Marathon, with my friend Z. This means I need to complete the required races for both events or I won’t be able to run with her. I also signed up for a summer run series, where I’ll be running eight Monday nights, starting in June and concluding in August. I want to be able to complete all the runs that are required so I can reach my goals.

Reaching your goals and changing your lifestyle doesn’t need to be difficult. You can set smaller goals that are “easier” to achieve, but still, help you reach your main goal. Let’s say your main goal is to run a full marathon. If you’ve never run 26.2 miles, this is a seemingly daunting task. As a smaller goal, begin running three days a week to get your body used to the motion of running for an extended period of time. There are many free apps available where you can set what your ultimate goal is and how long you have to achieve that goal, i.e., Race Day!

Perfect Summer Dinner: Angel Hair Primavera with WASA Crispbreads

Ingredients

  • 12 oz. angel hair
  • 2 c. broccoli florets
  • 1 pt. cherry tomatoes
  • 2 tsp. garlic powder
  • Salt
  • Pepper
  • 3/4 c. grated Parmesan, plus more for garnish
  • Sliced fresh basil, for serving

Instructions

  1. 1. Preheat oven to 400 degrees F. In a large pot of salted boiling water, cook pasta until al dente. Drain, reserving 1 cup pasta water, and return to pot.
  2. 2. On a large baking sheet, toss broccoli, tomatoes, mushrooms, and artichoke hearts with olive oil and season with garlic powder, salt, and pepper. Roast until tender and caramelized, stirring once, 15 to 20 minutes.
  3. 3. Add vegetables to pot along with Parmesan and 1/2 pasta water and, over low heat, stir vigorously to create a sauce. (Add more pasta water until you reach your desired consistency.)
  4. 4. Serve garnished with Parmesan and basil.
