So you are probably thinking a MOCK Apple Pie? I know bare with me I know you’ll love it! It’s easy and quick and a non-messy bake!
Ingredients:
Pastry for Two-Crust 9″ Pie
36 RITZ Crackers, Coarsely broken {about 1 3/4 cups crumbs}
2 cups water
2 cups sugar
2 teaspoons cream of tater
2 tablespoons lemon juice
2 tablespoons Vegetable Oil Spread
1/2 teaspoon ground cinnamon
No APPLES Needed ! 😉
Instructions:
Roll out half the pastry and line a 9-inch pie plate. Place crackers in prepared crust. In saucepan, over high heat, heat water, sugar and cream of tartar to a boil; simmer for 15 minutes. Add lemon juice; cool. Pour syrup {the water, sugar, cream of tartar, and lemon juice} over crackers. Dot with spread; sprinkle with cinnamon. Roll out remaining pastry; place over pie. Trim, seal, and flute edges. Slit top crust to allow steam to escape.
Bake at 425 Degrees F for 30 to 35 minutes or until crust is crisp and golden.
Cool Completely.
We made this on the day of Thanksgiving and it was so easy! We used aluminum pie plates so we could just leave it at my cousin Amy’s house and not worry about the platter! When we placed it in the oven, we put it on a cookie sheet with a lip so it’s easy to get it out.
We had about 14 people at my Thanksgiving, and it fed about 6 of us. It smells exactly like apple pie and tastes SO similar.
