Now that it’s 2014, I wanted to try to eat healthier, eat at home more, eat out less, and all of that. So I ventured over to Pinterest, and found a recipe where you cut the peppers in half.
I found the recipe to give me the idea from Dashing Dish Italian Style Stuffed Red Peppers.
It was literally on a whim I was making these, I found 2 peppers inside my fridge, had chop meat, corn, sauce, and shredded cheese. I’ve made regular stuffed peppers before- chop meat, corn, rice, sauce, salt/pepper, and plop them in a crock pot for a couple hours and bam done!
So this is what I did;
What you need:
•2-4 Peppers
•2 lbs Chop Meat
•1-2 Cups of Corn
•Shredded American Cheese {or whichever cheese you like}
•Baking pan to fit all of them on
Ready?
And here we go…
• First cut out the stem of the peppers and remove
Cut pepper down the middle
Remove the ribs, seeds, and rinse out
•Spray Pam on baking sheet {so it doesn’t stick}
{OR cover baking sheet with aluminum foil}
And lay the peppers out nice and neat
Set aside
And at this point put your oven to 450 degrees.
•At this point… start browning your chop meat.
I only did about 1 lb of chop meat here
•After all the chop meat is browned {don’t wanna get sick}
Add in sauce {any kind doesn’t matter}
Add in the corn and make a good mix
•After the mix is all done and yummy
Use a regular spoon and start scooping out the mix and
filling up the peppers to the tippy top
•After everything is stuffed {hehe} sprinkle some of that yumm-o
cheese and plop it in the oven for 25 mins
(I attempted to use the regular cheese and it was a fail so I put the american cheese on there)
•Finished Product! Cheese melted, all the yummy flavors soaked in.
I hope you try this recipe out; it’s quick, easy, and can be switched changed to become healthier also.
Ooh I love stuffed peppers, but I think I'll swap the meat for quinoa or something.. it always makes the peppers so juicy and flavorsome :o) Xx

Oh that would be a great swap I didn't get the quinoa yet so I just substituted it all. I'll have to make it that way when I get it ♥
