Who else loves having everything prepped and ready to go, whether it’s for dinner or for lunches? I know I do, it makes my life easier, and I can stay on track when I plan my meals out. I always assumed meal planning had to be difficult, that it would take hours to prep and organize, and I would find an excuse to not meal plan. And let me tell you, I was so wrong. Meal planning is a life changer, especially when you want to make healthier choices. It means instead of cooking dinner or going out to buy lunch it’s already prepped and just needs to be eaten. Simple right?
Another thing I wanted to make sure was in my meal planning is more protein and low calorie, so it would be an overall healthier solution to help me meet my goals. I am a simple person when it comes to meal planning, the easier it is, the better, plus simple usually means it’s quicker to cook. So usually in prep of meal planning, you have to do some food shopping, which for me is the worst part, LOL. Not with Sam’s Club though, on their app, you can order everything you need and set a day to pick it up! How awesome is that?! I put everything in my cart that I wanted and set a day to pick it up and I could even have a second person pick it up (which is what I did). My mom was able to check in, grab the cart filled with food and made her way home! It took less than 15 minutes which was perfect, and when you need to go food shopping but don’t have time to go to the store, pick up is the perfection solution.
From Sam’s Club, I grabbed Tyson® Frozen Chicken Breasts & Tyson Grilled and Ready® Chicken! I grabbed both because the Grilled and Ready® Chicken is perfect for when I didn’t meal prep but I still want a protein packed meal option. The Grilled and Ready® Chicken is perfect for salads, fajitas, or chicken and veggies without cooking the actual chicken. For when I have time to cook I love using a sheet pan to make my chicken and veggies, it’s the easiest way to cook everything all at once without dirtying more dishes. Fewer dishes to clean? WINNING!
Now, for my go to one pan veggies and chicken recipe! I swear it’s simple and you can change the veggies to ones you like or more variety and more spices on your chicken! Also, when I want to make chicken fajitas with peppers and onions this is a perfect way to make it all on one sheet.
Prep time: 15 minutes
Cook time: 20-25 minutes
Ingredients:
½ cup taco powder or chicken seasoning (depending on which way you want this recipe to go)
Salt
Freshly ground black pepper
1 1/2 lbs Tyson® boneless skinless chicken breasts, sliced thin strips
1 of each red and yellow bell peppers, cored and sliced into strips
2 cloves garlic, minced
3 Tbsp olive oil
1 bundle of asparagus, cut off 1” from bottom
3 zucchinis, cut off bottom and top and slice
10 oz of sliced mushrooms
Directions:
Preheat oven to 400 degrees F
On a large baking sheet, spray with non-sticking spray or a non-stick sheet
After slicing chicken and veggies, sort on the baking sheet
Drizzle olive oil over chicken and veggies and toss to coat
Add taco or chicken seasoning covering both sides of chicken breasts
Season veggies and chicken breasts with salt and pepper to taste
Cook for 20-25 minutes or until chicken is cook thoroughly
